Mushrooms as served at
breakfast
(use about 100gm per person)
Put the mushrooms into a small saucepan,
sweat with a tablespoon of butter
when they start to soften add 3-4 tablespoons of port or Liquor Muscat,
cook over medium heat to reduce wine by half, add quarter cup cream and
continue cooking until reduced to thickened syrup consistency. |
