One Portion
Ingredients 1 portion of
Atlantic samon
1 teaspoon unsalted butter
1 teaspoon grapeseed oil
1/2 cup lemon myrtle pasta
1/2 tiny peas, broccoli, and cauliflower florets, carrot ribbons (blanched)
METHOD cook pasta in boiling water, drain and toss with
blanched vegetables in 1 teaspoon unsalted butter, keep warm
Sear salmon in hot pan with oil and butter, skin side down until crisp.
Turn and cook briefly on other side keeping salmon pink in the middle.
Plate pasta and vegetables in a shallow bowl
Place salmon on top.
pour lemon myrtle sauce around and over pasta - garnish with fresh
lemon myrtle leaves.Lemon Myrtle Sauce
1 cup white wine
1 cup chicken stock
5 Lemon myrtle leaves (shredded)
juice of 1/2 Lemon
Boil above until liquid reduced by half.
Add 3/4 cup cream, reduce until thickened
remove from heat- strain
beat in 2 tablespoons unsalted butter to give a good sheen and sweetness,
Don't reboil.
